Hey there! How was your Monday? Mine went quite quickly but was very productive. Hoping the rest of the week is the same exact way 🙂 I’m pretty pumped to share this recipe with you all, being that it’s the first recipe I’ve made in the new apartment! Super easy and very delicious; a Tofu Veggie Sautee.
What you’ll need:
-1/2 cube tofu (anywhere from soft-firm is fine)
-chopped asparagus (one heaping cup)
-approx. 1/2 cup mushrooms
-1/4 cup dry roasted almonds
-2 tbsp sesame ginger dressing
To start, spray your pan with a non-stick spray, and then pour the 1/4 cup of almonds into the pan. Let them cook for about three-four minutes over medium heat in the center of the pan:
Let the veggies simmer in the soy sauce and dressing, allowing the dressing to become bubbly and delicious. Finally, add you tofu (cubed) along with 2 dashes of garlic powder:
Let cook for another 3-5 minutes.
Done! That’s it 🙂 That’s all it takes for a fantastically scrumptious meal. I must add, though, that the roasted almonds make such a difference in this dish. And the contrast of textures–between the almonds, tofu, and asparagus–work so well together.
