First Apartment Meal

Hey there! How was your Monday? Mine went quite quickly but was very productive. Hoping the rest of the week is the same exact way πŸ™‚ I’m pretty pumped to share this recipe with you all, being that it’s the first recipe I’ve made in the new apartment! Super easy and very delicious; a Tofu Veggie Sautee.

What you’ll need:

-1/2 cube tofu (anywhere from soft-firm is fine)
-chopped asparagus (one heaping cup)
-approx. 1/2 cup mushrooms
-1/4 cup dry roasted almonds
-soy sauce
-2 tbsp sesame ginger dressing
-Garlic Powder

To start, spray your pan with a non-stick spray, and then pour the 1/4 cup of almonds into the pan. Let them cook for about three-four minutes over medium heat in the center of the pan:

Once the almonds are cooked, add your veggies into the pan along with three dashes of soy sauce and the 2 tbsp of sesame ginger dressing:

Let the veggies simmer in the soy sauce and dressing, allowing the dressing to become bubbly and delicious. Finally, add you tofu (cubed) along with 2 dashes of garlic powder:

Let cook for another 3-5 minutes.

Done! That’s it πŸ™‚ That’s all it takes for a fantastically scrumptious meal. I must add, though, that the roasted almonds make such a difference in this dish. And the contrast of textures–between the almonds, tofu, and asparagus–work so well together.


I paired my tofu sautee with carrots, guac, and half of a pita. Couldn’t ask for more.

  1. I’m honestly not much of a tofu fan – however…it’s more a textural thing so if it’s in small pieces and/or fried I can deal. πŸ™‚

  2. Congratulations on the apartment! Your tofu scramble looks so much yummier than the first meal I ever made in my first apartment. The guac sounds awesome right now too!

  3. It’s weird but I’m eating something similar right now. Well. SORT OF.

    Rice noodles. Bok choy. Mushrooms. Cashews. A soy ginger dressing/soy sauce/hoisin/brown sugar/sri racha stir-fry sauce.

    So. Dang. Good.

    I gotta try with tofu!

  4. I am hesitant to try tofu…what is your suggestion for a first time try?
