Sunday Nights

Sunday nights for me, like most people, are bitter-sweet. There’s a ton of TV and relaxing to do after the weekend comes to a close, but there’s also the anticipation of the week ahead. And whose kidding – Monday’s aren’t particularly fantastic for anyone. I’ve kind of made it a point to make my Sunday evenings filled with preparing food for the following few days, sipping on a little red wine, and enjoying some Real Housewives of Whatever. It’s incredibly relaxing and makes the following few days — food wise — very easy.

So here’s a look at what my Sunday evening’s consist of:


A salmon filet marinated in ginger dressing I had saved from my sushi a few days earlier. Makes for the perfect end-of-the-weekend dinner.


Baking chicken for the week.


Veggies with some olive oil and sea salt.


Chocolate Chip Chia Seed Muffins adapted from Green Lite Bites.

Now I’m set for the next couple of days for breakfast and lunch! It rocks, quite honestly 🙂

Our friend Geoff has come over to help Britt prepare cupcakes for the people she works with tomorrow. Every Friday, someone from Britt’s job has to come in with some sort of food or drink. I think that’s a really nice idea so as to bring the workplace together and just have a nice time. So while Geoff does this:

All in all, Christmas was wonderful. I love spending time with people I usually don’t get to, and eating food that I generally steer clear of. In light of both my grandparents’ passing away this year, my heart was a little bit empty, but I just try to think that they’re still celebrating; they’re just somewhere else. I also have some really sad news… during the few days I was home, our little Mopsey passed away.

We found out that Mopsey had a brain tumor, amongst other illness’. It was his time. As many of you know, I brought Mopsey back from an animal shelter in November 2010 and we’ve loved him ever since. He was abused by his previous owners and had a ton of ailments but we loved him all the same. I sit here, typing this, trying not to blubber like a fool, but it’s really tough to love something so much and not be able to help it. We missed his little sweet face at Christmas, but we know that Mopsey is now in complete peace ❤

Sorry for the sad turn that this post had to take, but I couldn’t not recognize Mopsey during all of this. It’s so important to love and cherish everything in your life!

IT’S BACK PEOPLE! I know What I Ate Wednesday was gone for a hot second few weeks, but somehow I was just too busy to participate 😦 I’m so happy this has changed for this Wednesday and hopefully many more Wednesday’s to come! Thanks, Jenn, for being a fabulous host!

Let’s get to it. After work yesterday, I left the city to spend the holiday season at my parents’ house. I get to relax as much as I want until next Monday when I have to go back to the city! It feels great to have a ‘to do’ list that consists of going to the gym, shopping for Christmas presents, wrapping, and baking. Ahh, the good life! I took some pictures of my very Christmasy surroundings along with my two pups 🙂

Okay, onto the eats! I woke up pretty early (for sleeping in) around 8:00, which I was a bit disappointed about. Maybe it’s because I generally wake up at 7:15 for work, but I can’t ever seem to really sleep in. What a bummer. I was really hungry as soon as I woke up and decided to have a yogurt mix:

It consisted of a container of fat free cherry yogurt, some Honey Bunches of Oats, a tbsp of light maple syrup and a 1/2 tbsp of peanut butter. It was good, not great 😦

After breakfast, I layed around the house for a while and wrote down all of the ingredients I needed to get to make all of the cookies for Christmas… let’s just say I spent a little too much money…

After jotting down everything I needed, I went to the gym for a tough little workout. Cardio was my main focus and I did four repetitions that consisted of 2 minutes of fast walking followed by 8 minutes of running (from levels 6.0 – 7.0). I was definitely wiped after that! After the treadmill, I spent the remainder of my gym time working on my abs.

Lunch was actually in the form of Jenny Craig. We have some of the frozen meals laying around the freezer and I opted for something quick.

I chose the breakfast scramble which was pretty good, actually. I added some spinach in for greens and iron. It was a good choice. Dessert was a sugar free pudding cup with a bit of cool whip!

Last week, I scheduled an hour massage for myself and boy did I need it! I couldn’t believe how many knots I had… the massage was almost a bit painful, but in a good way. I’m hoping that with my muscles a bit looser and more relaxed, I’ll do even better at the gym tomorrow.

Dinner wasn’t anything special, just a can of light New England Clam Chowder. However, I did manage to jazz it up with a garlic knot. LOVE garlic knots!

That’s about it! I’m going to go bake and wrap some more Christmas presents 🙂 Hope you’re all enjoying your night.

Christmas Cookie Swap

Last night, Britt and I hosted the most wonderful Christmas Cookie party. Whenever I have a party, I’m always a little antsy because I just want everything to gel perfectly. I can honestly say that I couldn’t have asked for a better turn out. I decided to make Almond Joy Doughy Cookies from LemonGroveAvenue’s blog, and they turned out absolutely amazing. They were so delicious, in fact, that Britt deemed them as ‘coconut crack cookies’. Yep. If you bake them, just try not to eat all the batter first. It’s almost impossible.

Happy Sunday, all! Sorry I was MIA this weekend, I had a bunch of things going on, but now I can finally show you some of the pics. More specifically, from today. I had a pretty Christmas-intense weekend with making cookies, a family holiday party, and walking around 5th avenue this afternoon to see the Christmas lights/tree with Britt!
