WIAW

Hello hello and here we are for another What I Ate Wednesday thanks to Jenn 🙂 This is a look at what I ate on Tuesday… so let’s just pretend that all of this actually happened today.

My day started off with an awesome early morning workout after I voted! I started off with thirty minutes of cardio intervals and then completed a short but sweet arm workout and then headed home to this for breakfast:

My breakfast, which was eaten around 8:15, included egg beaters with low fat shredded mozzarella cheese along with two mini oatmeal chia seed muffins. I topped my muffins with a little low fat cream cheese and sugar free jelly 🙂

This meal kept me super full and I didn’t eat lunch until 1:30 (and shockingly had no snacks between breakfast or lunch–weird, I know). Lunch included about six ounces of baked chicken along with vegetables and a bag of 100 calorie pop chips.

Around 5:00 I had a handful of un-pictured grapes. After work I had an errand to run and was starving once I got home. Against my judgement, I had a handful of crackers but didn’t want to keep snacking so I ordered sushi:

I ordered a miso soup, sashimi, a roll with brown rice, and two pieces of brown rice sushi but the restaurant I ordered from was kind enough to include a free California roll! Score! I wound up saving half of my California roll and two pieces of my tuna roll along with one piece of sushi which I will eat tomorrow.

I’d say this was a pretty good day of food 🙂 Tryna’ keep it as healthy as possible before Thanksgiving! I know those will be a few days with tons of treats. Can’t wait!

Have a good day everyone 🙂

Happy WIAW everyone! I am going to be showing you what I ate yesterday — so this is technically a ‘What I Ate Tuesday’.. but I’m still showing it on Wednesday so there ya go! Thanks as always to Jenn for throwing this shin-dig together. Also, at the end of this post I have a great give away for all of you! Make sure to enter 🙂

For breakfast, which was eaten around 8:15-8:30, I whipped up some ‘Pumpkin Cheesecake Oats’ — these were amazing and I will definitely be making them more often.

It’s really simple to make these. What you’ll need:

-1/2 cup plain oats
-1 tbsp chia seeds
-about one cup unsweetened vanilla almond milk (or any milk you prefer)
-1 dash each of sea salt, cinnamon, and pumpkin spice
-2 tbsp lowfat plain cottage cheese
-2 tbsp pure pumpkin
-1 tbsp low sugar maple syrup

Directions: Stir oats, chia seeds, milk, and spices+sea salt over heat. Once thoroughly cooked, transfer to your bowland mix in the cottage cheese and pumpkin. Then drizzle the maple syrup on top if you choose!

This kept me full for a while. I didn’t eat lunch until 1:00. On Sunday night, I roasted some sweet potato, eggplant, and tempeh in the oven at 350 degrees for about twenty minutes. I simply chopped the eggplant and sweet potato and sprinkled olive oil and sea salt over them. For the tempeh, since I purchased it plain, I marinated it in an Asian ginger dressing for a little while before placing it into the oven. Both the vegetables and tempeh are delicious and together they create a healthy, filling lunch. I also throw in a 60 calorie string cheese for fun 🙂

(FYI, I picked at a granola bar throughout the day — I usually have about half before lunch and the other half after)

I also did something yesterday that I never do — I booked a last minute hour massage appointment for right after work. After a weekend of not working out, I worked out on Monday and my body was so stiff. I literally suffered through my workout and I know it’s because I’m just tight and sore–primarily in my back and legs. There’s plenty of reasons for this — running around the city, being busy, and working out–but I needed to fix it so I decided to skip the gym and get a massage instead! I booked my appointment through Lifebooker which is a discount beauty website that includes manicures, massages, hair treatments, you name it. Check it out!

Dinner was pretty simple:

Hi peeps! How’s it going? Okay, okay I have to admit.. I haven’t been the best blogger when it comes to taking pictures of my food lately. There has been other things going on in life that have just triumphed that area of the blog and I’ve been talking about other things. But, hey, I guess it happens. However, I am going to make more of a conscious effort to write up some posts’ about what I’ve been eating on a daily basis.

Anyhow, I still wanted to participate in Jenn’s What I Ate Wednesday and show you a few of the things I have been eating over the past week or two. Hope you enjoy, and as always, thank you to Jenn for throwing this together!

Autumn calls for apple chips!

My magical cupcakes

All in all I’ve enjoyed some pretty good food lately!

Question of the Day: What is the best meal you have had lately?

WIAW

Hi there! Well here we are again, ‘What I Ate Wednesday’! Can’t believe we are half way through the week–but I certainly don’t mind. Thank you as always to Jenn for throwing this party together 😉 Below you’ll see a few things I have been enjoying recently!

Breakfast:

In my smoothie mix was the following:
-1 cup skim milk
-1/2 cup frozen berries
-1/4 cup pure pumpkin
-1 tbsp cocoa powder
-pinch xantham gum

I also tossed in about 1 tbsp of oats on top for a little extra texture. It makes a difference to me!

A couple weeks ago, I was lucky enough to receive some Hershey’s Lite Chocolate Syrup to taste-test. It has been recommended by professionals to drink a glass of chocolate milk post-workout in order for the muscles to experience a solid recovery. Protein from the milk helps restore the muscles, vitamins and minerals sustain strong bones, and chocolate milk has the perfect carb to protein ratio–3:1.

To be honest I have been loving having a glass of chocolate milk either before or after my workout. I really enjoy that it’s not too filling, but also provides me with the energy I need. A huge perk of the Hershey’s Lite Chocolate Syrup is that it has 50% sugar than other chocolate syrup products. Score!

Lunch lately has been some sort of soup. It’s easy on the stomach yet filling. I wasn’t the biggest fan of having soup as a meal, but I am slowly but surely changing my tune. The soup below is a can of 99% fat free New England Clam Chowder (220 calories for the whole can) with some pretzels stirred in. Ya gotta try this soup with pretzels mixed in–insanely good.

Dinner last night was a serious winner in my book:

I drizzled the above with a bit of olive oil and sprinkled on some sea salt. Perfection!

Before signing off, I wanted to share two links with you — each warmed my heart. They are both about accepting our bodies in world that can be very non-accepting. It shows that we can break the mold and be happy with ourselves if we really want to. Hope you enjoy!

Question of the Night: What are some meals you have been enjoying lately? Any new snacks?!

WIAW

It’s been so long! Well maybe not SO long — technically I did leave you with a fashion post last Thursday prior to enjoying Labor Day Weekend. Dancing, drinking, and eating were on the agenda for my LDW and I wanted to show you a little bit of that before sharing my What I Ate Wednesday eats.

It was nice to get out of the city and spend time with my college friends. Onto WIAW — thanks, as always to Jenn for throwing this together! PS – Can you believe it is officially September and the WIAW theme is ‘FALL into good habits’?! I can’t.

Breakfast was eaten around 8:15

In the mix was one cup of nonfat plain greek yogurt, a tbsp of oats, 1/4 cup frozen berries, and 1 tbsp of sunflower butter. This kept me full until 1:00 when it was time for lunch.

My salad was kind of lame, I hate to admit. A couple of slices of deli turkey with shredded soy cheese and raw mushrooms over a small bed of arugula. Lame-o. Whatevs, ya win some ya lose some right??

My snack around 4:45 was an unpictured Asian pear. If you haven’t had an Asian pear, I suggest buying one! They are super delicious and can be found in almost any grocery store 🙂

And finally for dinner, which was eaten around 8:15, was a salad which consisted of arugula, a Trader Joe’s veggie burger, some soy cheese, and crushed tortilla chips. I topped it all with a tbsp of BBQ sauce. Quick and delicious!

Have a great day, everyone!

Here we are! Another What I Ate Wednesday. I don’t have anything too new or exciting to share with you but figured I could at least drop in and show my eats for the day. Thanks as always, Jenn, for throwing this shin-dig together.

This morning for breakfast I brought something back I haven’t had in a while. I’m so guilty of neglecting my Vitamix all Summer. Unless you count the time we made Firefly Slushies at our July 4th party (aka alcoholic iced tea slushies… so good yet so lethal). While I didn’t have a firefly slushy this morning, I did opt for a chocolate berry protein smoothie:

Into the blender went:
-1 packet of eggwhite chocolate protein powder (110 calories)
-about 1/2 cup frozen mixed berries
-1 cup unsweetened vanilla almond milk (40 calories)
-teeny tiny pinch of Xantham Gum to thicken up the smoothie

Once the smoothie was done mixing, I poured it in a bowl and sprinkled plain oats on top. I’d say the whole smoothie was about 250-275 calories and did an awesome job at filling me up. Thank God it kept me full, too, because I didn’t get to eat again for another 5 1/2 hours.

My very late lunch included a little mix of baked eggplant segments, brusssel sprout, and tofu along with some grapes:

For something sweet I rounded out the meal with a graham cracker spread with some Trader Joe’s Cookie Butter along with Sugar Free Blueberry Jam:

Dinner was just finished a little while ago and included egg whites, soy cheese, and a Trader Joe’s veggie burger. I paired it all with my favorite Trader Joe’s crackers.

A good day of eats I would say!

Question of the Night: What would you say your typical day of eats looks like?

WIAW

It’s that time of the week again! What I Ate Wednesday! I’ve been taking pictures of random meals I’ve had so far this week. My ‘summer staples’ seem to be salads, vegetables, frozen yogurt, greek yogurt, and snacks! Thanks so much, Jenn, for throwing this party each and every week 🙂

I was sent this ‘Infuse Your Mood Tea’ by Sun Chlorella USA. It is caffeine-free, 100% natural, and claims to support your body against the every day stresses of living. It also states that the tea enhances inner calm and focus, supports physical endurance, and improves concentration and memory. I’ve been drinking a cup of this tea in the morning before I leave for work (and before I drink my coffee) and have really been enjoying it. The flavor isn’t too over-whelming and it actually feels kind of cleansing. I’ll be making this a morning tradition from now on!

Stay tuned for a review of these soon!

Hope you all had a great Wednesday 🙂
